Growing up on T.V. dinners and noodles, I still struggle with confidence in the kitchen. I pretty much get in, do what I gotta do, and get out. Despite being raised by an amazing cook, my husband isn’t at all picky and thankfully will eat just about anything. Anything except breakfast. His mornings start so early that any time he can reserve for rest he does just that. I tried a few times to get up with him and scrambles some eggs or something…but usually I sleep right through the alarm. One night I was up with my teething Eager Explorer and since I had plenty of time before he left for work, I decided I’d try to my first homemade breakfast taco.
Initially I planned to just make some for breakfast, but I ended up having extra filling left over. I decided to roll up the surplus and try freezing them. The next day after I made my son a sandwich for lunch, I realized he got the last slices of bread. Wanting to avoid the extra dishes of preparing anything else, I grabbed a frozen taco, unwrapped the tinfoil and threw that puppy in the microwave. MY LIFE WILL NEVER BE THE SAME.
I don’t know what I expected….perhaps a soggy, disgusting mess…but to my surprise and delight, it was just as good as the day before! Did I just discover a way to bless my family with a warm relatively healthy breakfast and not have to actually cook every morning? BOOM BABY! As the days passed, even if my son wanted oatmeal instead, or I was able to squeeze in time enough throw in some biscuits, simply knowing I had a decent back-up plan took the pressure off my mornings. Not to mention it took off some of the (self placed) guilt from not getting up in the mornings to cook breakfast while my husband got ready for work.
So yeah, this Thursday I am thankful for so many things, my handsome hardworking hubby, my bright and energetic first grader, my healthy teething baby and the mini moment that lead to my breakfast taco discovery!
